Chickweed Pesto Recipe

We have plenty of chickweed growing. It's so healthy, so I decided to turn it into pesto. It turned out really nice, and the teenager rating was 10/10 (they were fighting for it).
I did not measure the ingredients. You will either need a food processor or a strong stick mixer. I used much more greens than I would use for a classical basil pesto, There will be another blog on why chickweed is so healthy and one how to recognise chickweed.
BTW we do not use wholemeal pasta. It is not healthier than the usual one, but that is another story and a long one!
Ingredients:
  • Chickweed (about a salad spinner full)
  • Pinenuts (can be replaced by walnuts) about a handfull
  • Olive oil
  • Parmesan cheese cut in rough pices, 100 gr (depending on your budget) can be replaced by any other hard, strong tasting cheese, but parmesan is really better
  • Garlic to taste (a bit more, it;s flue season), salt, pepper.
Process everything in the food processor. It will process better if you put a bit water in as well. Because pesto is cold and I don't want to eat cold pasta, I use hot water. That's It!
